We feel very lucky to have chef Alfredo Romero and his team serving up their tacos and other Mexican delights at 269.
A chef for over 25 years, he has supervised food and beverage operations across the globe, honing his craft in Europe, Asia, Oceania, Africa, and the Americas while working for hospitality groups such as Marriott International, The Ritz Carlton, Banyan Tree, Sofitel, Galaxy Macau, and SkyCity Casinos.
But this isn’t about fancy degustations – this is about going back to his roots and serving the kind of food he ate as a child in Sonora in the north of Mexico. Fascinatingly Alfredo’s career also includes travelling 4000+ km all over Mexico to help document the national cuisine and preserve old recipes that had only ever been handed down by word of mouth. He’s literally a walking encyclopedia of Mexican Cuisine.
After training at Le Cordon Bleu in Wellington, then working at Euro, SkyCity, and most recently as Executive Chef at the Sofitel, Alfredo is ready to return to where it all began and serve true Mexican food to lucky customers at 269.
